Bake-off: At Home!

We’re all about sharing the lurve and encouraging people to have fun in the kitchen. Today we are baking up a storm with a huge batch of these Smiley Cookies so we thought we’d share the recipe with you so you can whip a batch up at home. These happy guys are a total crowd pleaser and are perfect paired with a mid morning coffee or a little lunch box treat.

Here’s what you need to make the happiest cookies that ever existed:

Butter 150gm
Sugar 155gm
Golden Syrup 20gm
Vanilla 1 teaspoon
Eggs 1 x 60gm egg, lightly beaten
Flour 275 gm, sifted
Baking powder 1 teaspoon
Salt ½ teaspoon
Milk chocolate 250gm
Smarties 140gm pack
Freckles 200gm pack

Here’s how you do it:

It’s ideal to have your butter and eggs at room temperature before you start the recipe.
Cream your butter, sugar, golden syrup and vanilla on low speed for 1 minute, then turn the speed up to high and cream until light in colour, about 3-4 minutes.
Add your eggs slowly and mix until incorporated.
Add in your dry ingredients (flour, salt and baking powder)
Add your chocolate chunks
Let your dough rest anywhere up to 48 hours for best results, if you can’t wait….
Scoop with an ice cream scoop, decorate with smarties and freckles into a smiley face and bake for about 15 minutes in a hot oven at 170c.

And if these bad boys don’t put a smile on your face and a spring in your step, nothing will! Happy days!

Market Madness.

We are gong mad for Markets right now. Yessiree! We love representing in communities and getting up close with locals in their natural habitats! We’re total chatty Cathy’s and we absolutely love meeting out beautiful customers. There are so many great market initiatives in and around Sydney and we are doing our utmost best to get around to all of them and scope them out. Keep an eye put for us at the Glebe Markets (June 4) and Bulli Markets (June 5) and we often pop up at the Finders Keepers Market and have been known to make an appearance at The Grounds weekend markets. We will keep you up to date with upcoming markets on our home page and social media channels.

This weekend we will be loaded up with Brookies! Bookies, Brookies and more Brookies in a drool-worthy selection of new flavours for you to sample. So grab your crew, a coat and a strong latte and wander these fab little markets. Nothing better to do on a fine Winters day, we’ll see you there!

What is a Brookie?

What would you get if a Cookie and a Brownie gave birth to a love child? A Brookie of course, duh!

You heard right, Brookies are the latest and greatest decadent delight to shake the baking world. We are seasoned hands at the old Brookie and they have been a part of our repertoire for quite some time. Given they are starting to steal some of the limelight from their Cookie and Brownie cousins we thought we’d blow the lid on Brookies.

What you need to know about this delicious hybrid:

1. They are chocolate in colour with a similar aesthetic to a brownie
2. The are cream, icing or even ice-cream filled and resemble a cookie sandwich
3. They come in a variety of flavours
4. They are gob-smackingly delicious
5. They contain no calories and are completely guilt free indulgence**

** this statement is complete lie.

So do yourself a favour and get a Brookie into your gob. They really are something else!
